  • 6 cups chopped romaine or butter lettuce 
  • 1 pound shrimp, peeled and deveined 
  • 1 cup pineapple, diced
  • 1 sweet bell pepper, diced
  • 5 tablespoons olive oil, divided
  • 1 jalapeno, halved, seeded and sliced, divided
  • 1 red chile, halved, seeded and sliced, divided
  • 1 red onion, thinly sliced
  • 1 tablespoon Inspiced One Love Blend
  • 1/2 teaspoon Inspiced Everyday Gourmet
  • 2 1/2 tablespoons fresh lime juice
  • 1/2 teaspoon dijon mustard 


  1. Preheat oven to 400°F.   
  2. Toss the shrimp, One Love, red pepper, half of the red onion, half jalapeno, half red chile, in 2 tablespoons of olive oil, until evenly coated.
  3. Roast shrimp for 10-15 minutes on foil-lined baking sheet for 10-15 minutes or until opaque.  
  4. In a small bowl, combine pineapple, remaining onion, jalapeno, red chile, and 1/4 teaspoon of Everyday Gourmet.
  5. To create vinaigrette, combine 3 tablespoons olive oil, lime juice, dijon mustard and 1/3 teaspoon of Everyday Gourmet.  Whisk to combine.
  6. To serve, top lettuce with shrimp mixture and pineapple salsa.
