Ingredients

  • 2 cups red onions, diced
  • 5 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons Inspiced Habeshan Hug
  • 1 tsp Inspiced Everyday Gourmet
  • 4 tablespoons olive oil
  • 6 chicken thighs, skin-on

Directions

  1. Preheat oven to 400°F.
  2. Heat 2 tablespoons of olive oil in a heavy skillet or dutch oven. Saute onion, garlic, and ginger in oil, until tender, about 5-7 minutes. Add one tablespoon of Habeshan Hug and saute for an additional 2-3 minutes. Place the ingredients in a blender or food processor and process until pureed.
  3. Wash and pat chicken dry with a paper towel.  Generously season each piece with Everyday Gourmet and Habeshan Hug.
  4. Heat a separate skillet, heat 1 tablespoon of oil over medium heat. Place chicken skin side down and sear for 6-8 minutes.
  5. Turn chicken, lower heat and cook an additional 2-3 minutes. Add the pureed vegetables around the chicken. Place in preheated oven and allow to cook for an additional 10-15 minutes or until chicken reaches an inter
