Heat 2 tablespoons of olive oil in a heavy skillet or dutch oven. Saute onion, garlic, and ginger in oil, until tender, about 5-7 minutes. Add one tablespoon of Habeshan Hug and saute for an additional 2-3 minutes. Place the ingredients in a blender or food processor and process until pureed.
Wash and pat chicken dry with a paper towel. Generously season each piece with Everyday Gourmet and Habeshan Hug.
Heat a separate skillet, heat 1 tablespoon of oil over medium heat. Place chicken skin side down and sear for 6-8 minutes.
