Ingredients

  • 2 tablespoons vegetable oil
  • 2 teaspoons cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon Inspiced Everyday Gourmet
  • ½ teaspoon Inspiced Mumbai Magic
  • 1 green chile, seeded and thinly sliced
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 lemon, juiced
  • 1 cup and 2 tablespoons water, boiled
  • ½ red onion, thinly sliced
  • Cilantro leaves, chopped for serving
  • Olive oil, for serving

Directions

  1. Heat vegetable oil in a large pan over medium heat, then add the cumin seeds until fragrant, about 10 seconds. Add the coriander, Everyday Gourmet, Mumbai Magic,  and half the green chile.  Continue stirring until fragrant. 
  2. Add the chickpeas, lemon juice, and boiled water.
  3. Gently mash some of the chickpeas to help thicken the sauce. Turn the heat to high, bring to a boil, and cook for 10-12 minutes until the sauce thickens and reduces.
  4. To serve, garnish with onion slices, cilantro, remaining chile, and a drizzle of olive oil.
