INGREDIENTS

  • 1 pound firm white fish (e.g., cod, halibut, sea bass snapper), cut into large chunks
  • Inspiced Everyday Gourmet Blend
  • Juice of zest of 1 lime
  • 2–3 tablespoons Palm Oil
  • 1 yellow onion, finely diced
  • 1 red bell pepper, sliced
  • 2 garlic cloves, minced
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • Pinch of Cayenne
  • 1 14 oz can full-fat coconut milk (liquid and solids)
  • 1 large tomato or a 14 oz can diced tomatoes, with juices
  • 1 cup fish stock or water
  • Cooked rice for serving

 

DIRECTIONS

  1. Rinse and the fish pieces dry and then place in a bowl.  Add Everyday Gourmet, lime zest and lime juice.  Toss lightly to coat all pieces well.  Set aside and allow to marinate for 30 minutes to an hour.  Drain the juices from the marinated fish. 

  2. In a large sauté pan, heat the palm oil over medium-high heat.  Add the fish and cook until just cooked through.  Remove the fish pieces and set aside.  Add the onions and bell peppers to the sauté pan and cook until softened.  Reduce the heat to medium and add the garlic and spices, cooking an additional 1-2 minutes. 

  3. Add the coconut milk, diced tomatoes, and stock.  Mix and bring to a simmer.  Allow to gently simmer for about 5 minutes before adding the fish pieces back to the pan.   Continue simmering until fish is heated through. 

  4. Season with additional Everyday Gourmet to taste.  Serve with rice.
