1 pound medium shrimp, peeled, deveined and roughly chopped
1/2 cup fresh lime juice (approximately 3-4 limes)
2 roma tomatoes, chopped
1/4 cup red onion, diced
1 green chile pepper (such as jalapeno or serrano), stemmed, seeded, and minced
1/4 cup cilantro, chopped
2-3 medium avocados, chopped
½ teaspoon Inspiced Chile Lime Salt
½ teaspoon ground black pepper
Tortilla chips, for serving
- In a large bowl add the shrimp and lime juice. Stir to evenly coat shrimp and let stand for 5 minutes until the shrimp turn opaque.
- Add the tomatoes, red onion, chile pepper, cilantro and stir to evenly combine with the lime juice and shrimp. Cover and refrigerate for an hour.
- Add the chopped avocados, Chile Lime Salt, and pepper. Stir to combine.
Serve with tortilla chips.
