2 tablespoons olive oil
1 onion, finely chopped
1 leek, finely chopped
4 garlic cloves, finely chopped
1 tablespoon Inspiced Mumbai Magic, plus more for serving
1 celery stalk, finely diced
1 carrot, finely diced
1 ¼ cup lentils
1 (14.5 ounce) can diced tomatoes,
1 tablespoon tomato paste
7 cups chicken or vegetable stock
2 teaspoons Inspiced Everyday Gourmet, plus more for serving
2 thyme sprigs
- Heat the oil in a heavy bottom saucepan or dutch oven. Add the onion, leek, and garlic. Cook and stir for about 2 minutes. Add the Mumbai Magic and cook over medium heat for an additional 2 minutes. Stir in the celery and carrot. Cover and cook over low heat for about 10 minutes, stirring occasionally, until vegetables have softened.
- Add the lentils and stir to coat in the vegetables. Add tomatoes, tomato paste, stock, Everyday Gourmet, and thyme. Bring to a boil, then lower the heat to a simmer for 50 minutes, stirring occasionally. Add additional stock or water throughout to ensure lentils are covered with liquid.
- Season to taste with additional Everyday Gourmet and Mumbai Magic.
