Ingredients

2 tablespoons olive oil

1 onion, finely chopped

1 leek, finely chopped

4 garlic cloves, finely chopped

1 tablespoon Inspiced Mumbai Magic, plus more for serving

1 celery stalk, finely diced

1 carrot, finely diced

1 ¼ cup lentils

1 (14.5 ounce) can diced tomatoes,

1 tablespoon tomato paste

7 cups chicken or vegetable stock

2 teaspoons Inspiced Everyday Gourmet, plus more for serving

2 thyme sprigs

Directions

  1. Heat the oil in a heavy bottom saucepan or dutch oven. Add the onion, leek, and garlic.  Cook and stir for about 2 minutes.  Add the Mumbai Magic and cook over medium heat for an additional 2 minutes.  Stir in the celery and carrot.  Cover and cook over low heat for about 10 minutes, stirring occasionally, until vegetables have softened.
  2. Add the lentils and stir to coat in the vegetables. Add tomatoes, tomato paste, stock,  Everyday Gourmet, and thyme.  Bring to a boil, then lower the heat to a simmer for 50 minutes, stirring occasionally.  Add additional stock or water throughout to ensure lentils are covered with liquid. 
  3. Season to taste with additional Everyday Gourmet and  Mumbai Magic.
