  1. Combine lamb chops, oil, Zenful Za’atarand Sel Gris, ensuring that the chops are well coated. Place in a covered bowl or ziplock bag and marinate in the refrigerator from 30 minutes to overnight.  The longer the better.
  2. Heat a griddle pan or cast-iron skillet over high heat until smoking. Add lamb chops.  Cook 3-5 minutes per side, depending upon desired wellness.  Let rest for two minutes before serving.
